Description

Amish Apple Fritter Bread is a moist, flavorful loaf featuring a delightful cinnamon-apple filling swirled through a tender, buttery batter. Finished with a sweet vanilla glaze, this bread is perfect for breakfast, brunch, or a comforting snack any time of the day.

Ingredients

Scale

Batter

  • 1/2 cup (113g) unsalted butter, softened
  • 2/3 cup (133g) granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 3/4 tsp baking powder
  • 1/2 cup (120ml) milk

Apple Cinnamon Mixture

  • 2 medium apples, peeled, cored & diced (mix of tart & sweet)
  • 1/3 cup (67g) brown sugar
  • 1 tsp ground cinnamon

Glaze

  • 1/2 cup (60g) powdered sugar
  • 12 tbsp milk
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper to ensure easy removal later.
  2. Make the cinnamon-apple mixture: In a medium bowl, toss the peeled, cored, and diced apples with brown sugar and ground cinnamon until evenly coated. Set this flavorful mixture aside.
  3. Prepare the batter: Using a large mixing bowl, cream the softened butter and granulated sugar together until the mixture is light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract, blending well after each addition.
  4. Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add these dry ingredients to the butter mixture alternately with the milk, stirring gently until just combined; avoid overmixing to keep the bread tender.
  5. Assemble the loaf: Pour half of the prepared batter into the lined loaf pan, then evenly sprinkle half of the cinnamon-apple mixture on top. Repeat with the remaining batter and apple mixture. Use a knife to lightly swirl the layers together, creating a marbled effect throughout the bread.
  6. Bake the bread: Place the loaf pan in the preheated oven and bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean, indicating the bread is fully cooked.
  7. Cool the loaf: Remove the bread from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely for optimal texture and easier glazing.
  8. Prepare the glaze: In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth and pourable. Drizzle this glaze evenly over the cooled bread to add a sweet finishing touch.
  9. Serve: Slice the Amish Apple Fritter Bread and enjoy it warm or at room temperature. It pairs wonderfully with butter or a hot cup of tea or coffee.

Notes

  • Use a mix of tart and sweet apples like Granny Smith and Fuji for balanced flavor and texture.
  • Ensure apples are diced into uniform pieces for even distribution and consistent baking.
  • Do not overmix the batter to keep the bread tender and moist.
  • The glaze consistency can be adjusted by adding more milk if too thick or more powdered sugar if too thin.
  • Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days.
  • This bread can also be frozen for up to 2 months; thaw at room temperature before glazing.
