Description

Blueberry Cheesecake Protein Bites are a quick, no-bake, protein-packed snack that combines creamy cheesecake flavors with antioxidant-rich blueberries and a hint of vanilla. Perfect as a healthy treat for fitness enthusiasts and busy people alike, these bites offer a balanced blend of protein, healthy fats, fiber, and slow-burning carbs, making them ideal for post-workout recovery or guilt-free snacking.

Ingredients

Scale

Dry Ingredients

  • 1/2 cup rolled oats
  • 1 cup almond flour
  • 2 scoops vanilla protein powder
  • 1/4 tsp salt

Wet Ingredients

  • 1/4 cup cream cheese (softened)
  • 1/4 cup Greek yogurt
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract

Fruit

  • 1/2 cup fresh or frozen blueberries

Instructions

  1. Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, almond flour, protein powder, and salt. Stir thoroughly until all dry ingredients are evenly distributed.
  2. Prepare Wet Mixture: In a separate bowl, beat together softened cream cheese, Greek yogurt, honey (or maple syrup), vanilla extract until smooth and creamy with no lumps.
  3. Fold in Blueberries: Gently fold fresh or frozen blueberries into the wet mixture carefully, so the berries remain mostly intact and don’t crush.
  4. Combine Wet and Dry: Gradually add the dry ingredient mixture into the wet mixture, stirring well until a dough-like consistency forms that holds together when pressed.
  5. Form Bites: Scoop tablespoon-sized portions of the dough and roll them into bite-sized balls using your hands.
  6. Chill: Place the formed protein bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to allow them to firm up.
  7. Store and Serve: Transfer the protein bites to an airtight container. Store refrigerated for up to 1 week or freeze for longer shelf life. Enjoy chilled as a convenient and healthy snack.

Notes

  • Use fresh or frozen blueberries depending on availability. If using frozen, thaw them slightly before folding in.
  • For a vegan version, substitute cream cheese and Greek yogurt with dairy-free alternatives and use a plant-based protein powder.
  • You can adjust sweetness by adding more or less honey/maple syrup according to taste.
  • Rolling the bites tightly will help them hold together better when chilled.
  • These no-bake bites are perfect for meal prepping and can be portioned out for grab-and-go snacking.
