Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a pizza pan or baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Make Cheese Crust: Spread 2 cups of shredded mozzarella and 1 cup of shredded cheddar evenly on the lined pan in a large circle, about 10–12 inches in diameter. This will form your cheese crust base.
  3. Bake Cheese Crust: Place the pan in the oven and bake for 8–10 minutes until the cheese melts, becomes bubbly, and turns lightly golden. This ensures your crust is set and crisp.
  4. Add Toppings: Carefully remove the cheese crust from the oven. Evenly crack the 4 eggs directly onto the cheese base. Sprinkle the cooked and crumbled breakfast sausage, diced red onion (if using), and the additional 1 cup mozzarella plus ½ cup cheddar over the eggs. Season with salt, black pepper, and red pepper flakes to taste.
  5. Bake Again: Return the pizza to the oven and bake for another 10–12 minutes, or until the eggs are set to your preferred doneness and the toppings are heated through with the cheese melted.
