Description

These Cinnamon Roll Energy Bites are a delightful and nutritious snack that combines the warm, comforting flavors of cinnamon rolls with the convenience and energy boost of protein-packed bites. Made with natural almond butter, maple syrup, vanilla protein powder, rolled oats, and a drizzle of melted white chocolate, they offer a perfect balance of sweetness and spice, ideal for a quick snack or post-workout fuel.

Ingredients

Scale

Base Ingredients

  • 1 cup natural creamy almond butter
  • ⅓ cup pure maple syrup
  • ½ cup vanilla protein powder
  • 2 teaspoons vanilla extract
  • ½ cup rolled oats
  • 1 teaspoon salt
  • 1 ½ teaspoons cinnamon

Topping

  • ½ cup white chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Mix Ingredients: Add the almond butter, maple syrup, vanilla protein powder, vanilla extract, rolled oats, salt, and cinnamon to a mixing bowl. Use a rubber spatula to mix the ingredients together until a thick batter forms.
  2. Prepare Baking Sheet: Line a baking sheet with wax paper. Use a 1.5 tablespoons sized mini cookie scoop to drop balls of batter onto the baking sheet.
  3. Shape Energy Bites: Roll each ball with your hands to smooth out the edges.
  4. Melt Chocolate: In a microwave-safe bowl, add the white chocolate chips and coconut oil. Melt the chocolate in 10-15 second increments in the microwave, stirring each time, until melted. Be careful not to burn.
  5. Drizzle Chocolate: Drizzle the tops of the energy bites with the melted white chocolate.
  6. Chill: Place the baking sheet with the energy bites on it into the refrigerator for 1 hour, or until the balls are hardened.
  7. Store: Transfer the energy bites to an airtight container and store in the refrigerator or freezer.

Notes

  • Use natural creamy almond butter without added sugars or oils for the best flavor and texture.
  • You can substitute pure maple syrup with honey or agave syrup if preferred.
  • Ensure to use a good quality vanilla protein powder for rich taste and adequate protein content.
  • If white chocolate is not desired, dark chocolate chips can be used as a healthier alternative.
  • These energy bites keep well in the refrigerator for up to one week or can be frozen for up to one month.
