Ingredients
Scale
Bread:
- 1 loaf French bread or Brioche, cubed (approx 10 cups)
Custard Mixture:
- 4 large eggs
- 1.5 cups whole milk
- 0.25 cup granulated sugar
- 2 tsp vanilla extract
- 1 tsp cinnamon
Topping:
- 0.5 cup unsalted butter, melted
- 0.5 cup granulated sugar
- 1 tbsp cinnamon
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and thoroughly grease a 12-cup muffin tin to prevent sticking.
- Prepare Bread Cubes: Cut the French bread or brioche into small 1-inch cubes and place them in a large mixing bowl.
- Make Custard Mixture: In a separate bowl, whisk together the eggs, whole milk, 1/4 cup granulated sugar, vanilla extract, and cinnamon until fully combined.
- Combine Bread and Custard: Pour the egg mixture over the bread cubes, gently tossing to ensure all pieces are coated. Let the mixture sit for 10 minutes to allow the bread to soak up the custard.
- Fill Muffin Tin: Divide the soaked bread mixture evenly among the muffin cups, pressing down slightly to compact the mixture.
- Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes until the muffins are golden brown and set.
- Prepare Toppings: While the muffins are baking, melt the unsalted butter in a bowl. In another bowl, mix together the remaining granulated sugar and cinnamon for the coating.
- Coat Muffins: After baking, allow the muffins to cool for 5 minutes. Then, dip the tops of each muffin into the melted butter and roll them in the cinnamon sugar mixture until well coated.
- Serve: Serve the muffins warm, optionally with maple syrup for extra sweetness.
Notes
- Use whole milk for a richer custard; you may substitute with 2% if preferred.
- Letting the bread soak adequately is key to moist muffins.
- Pressing the bread mixture down ensures the muffins hold together well.
- Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
- Reheat gently in the oven or microwave before serving.
