Instructions

- Sauté Vegetables: Stir in the diced onion and carrots, cooking until they soften, roughly 4-5 minutes, stirring frequently to prevent burning.
- Add Garlic: Add the minced garlic and cook for 30 seconds more, just until fragrant, being careful not to burn it.
- Add Broth and Orzo: Pour in 3 cups of chicken broth and add the uncooked orzo pasta, stirring to combine.
- Simmer Orzo: Bring the mixture to a boil, then reduce heat to a simmer. Cook uncovered for 10-12 minutes, stirring occasionally, until the orzo is tender and most of the broth is absorbed.
- Mix in Remaining Ingredients: Stir in the frozen peas, heavy cream, dried thyme, dried parsley, black pepper, and salt to taste.
- Thicken the Sauce: Continue to simmer the mixture gently until it thickens and becomes creamy, about 3-5 minutes more.
