Instructions

  2. Cook the Chicken: Add the diced chicken to the pot, cooking until it is lightly golden on the outside and cooked through, about 5-7 minutes.
  3. Sauté Vegetables: Stir in the diced onion and carrots, cooking until they soften, roughly 4-5 minutes, stirring frequently to prevent burning.
  4. Add Garlic: Add the minced garlic and cook for 30 seconds more, just until fragrant, being careful not to burn it.
  5. Add Broth and Orzo: Pour in 3 cups of chicken broth and add the uncooked orzo pasta, stirring to combine.
  6. Simmer Orzo: Bring the mixture to a boil, then reduce heat to a simmer. Cook uncovered for 10-12 minutes, stirring occasionally, until the orzo is tender and most of the broth is absorbed.
  7. Mix in Remaining Ingredients: Stir in the frozen peas, heavy cream, dried thyme, dried parsley, black pepper, and salt to taste.
  8. Thicken the Sauce: Continue to simmer the mixture gently until it thickens and becomes creamy, about 3-5 minutes more.
  9. Rest and Serve: Remove the pot from heat and let the dish rest for 5 minutes to allow flavors to meld before serving warm.

  • Use whole milk as a lighter substitute for heavy cream if preferred, but cream provides a richer texture.
