Ingredients
Scale
Brownies
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1 stick (1/2 cup) unsalted butter
- 2 teaspoons coffee extract or 1 tablespoon instant coffee
- 1 cup granulated sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
Coffee Frosting
- 1/3 cup unsalted butter
- 2 cups powdered sugar
- 1 1/2 teaspoons instant coffee granules
- 2–4 tablespoons heavy whipping cream
Instructions
- Prepare the Baking Dish and Oven: Preheat your oven to 350°F (175°C). Grease an 8-inch baking dish with non-stick spray or line it with parchment paper and lightly spray to prevent sticking.
- Melt Butter and Mix Wet Ingredients: Melt the unsalted butter in the microwave. Transfer it to a large mixing bowl and add the granulated sugar, eggs, vanilla extract, and coffee extract or instant coffee. Stir until the mixture is well blended and smooth.
- Add Dry Ingredients: In a separate bowl, combine the all-purpose flour, unsweetened cocoa powder, salt, and baking powder. Gradually fold the dry ingredients into the wet ingredients, mixing gently until the batter is smooth and fully combined.
- Bake the Brownies: Pour the batter evenly into the prepared baking dish. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. Remove from oven and let the brownies cool completely before frosting.
- Prepare the Coffee Frosting: Dissolve the instant coffee granules in 2 tablespoons of heavy whipping cream and set aside. In a bowl, beat the unsalted butter until light and fluffy, then gradually add the powdered sugar. Slowly pour in the coffee-infused cream, mixing well. Add more cream, one tablespoon at a time, until the frosting reaches your desired spreading consistency.
- Frost the Brownies: Once the brownies are fully cooled, spread the coffee frosting generously over the top. Slice into squares and serve.
Notes
- To amplify the coffee flavor, use espresso powder instead of regular instant coffee for a bolder taste.
- For a lighter frosting, start with 2 tablespoons of heavy cream and add more gradually until the frosting is the right consistency.
- Optional: Fold in chocolate chips or chopped nuts into the brownie batter before baking to add texture.
- Store brownies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- Freeze unfrosted brownies wrapped tightly in plastic wrap and an airtight container for up to 3 months; thaw and frost freshly before serving.
