  • 100g chopped white onion
  • 75g red bell pepper
  • 75g green bell pepper
  • 75g yellow bell pepper

Pantry & Seasonings

  • Salt, pepper, paprika, and chili flakes (to taste)
  • 125ml reserved pasta water
  • 240g dry macaroni (whole wheat or chickpea pasta for extra protein)

Garnish

  • Fresh parsley for garnish

Instructions

  1. Cook Pasta: In a large pot of salted boiling water, cook the macaroni until al dente. Before draining, reserve 125ml of the pasta water to use later in the sauce. Drain the pasta and set aside.
  2. Sauté Veggies: Heat the butter in a large skillet over medium heat. Add the minced garlic, chopped onion, and assorted bell peppers. Sauté for 4 to 5 minutes until vegetables are softened and fragrant.
  3. Add Beef: Crumble the lean ground beef into the skillet with the vegetables. Cook for 5 to 7 minutes, breaking up the meat as it browns. Drain any excess fat from the skillet if necessary. Season the beef mixture with salt, pepper, paprika, and chili flakes according to taste.
  4. Make it Creamy: Reduce the heat to low and stir in the light cream cheese, shredded mozzarella, and cheese slices. Mix until all the cheeses have melted together, creating a silky and creamy sauce that envelops the beef and vegetables.
  5. Bring it Together: Add the cooked macaroni and the reserved pasta water to the skillet. Stir well to coat every noodle with the creamy cheese sauce. Adjust the sauce thickness by adding more pasta water if needed for desired consistency.
  6. Garnish and Serve: Remove from heat, garnish with fresh parsley, and serve immediately for a delicious, warm, high-protein meal.
