  • 1 lb boneless, skinless chicken thighs

  • 2 cups chicken broth
  • 1 cup mixed vegetables (optional)

Sauce

  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tbsp soy sauce

Instructions

  1. Season the Chicken: In a bowl, season the boneless, skinless chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper. Make sure each piece is evenly coated with the spices.
  2. Sear the Chicken: Heat a skillet over medium heat and add a little oil. Sear the chicken thighs for 3–4 minutes on each side until they are golden brown. Remove the chicken from the pan and set aside.
  3. Prepare the Sauce: In a small bowl, combine the BBQ sauce, honey, soy sauce, and minced garlic. Mix well until all ingredients are incorporated.
  4. Toast the Rice: Using the same skillet, add the uncooked long-grain rice and toast it for 1–2 minutes while stirring frequently. This step enhances the nuttiness of the rice.
  5. Add Liquid and Sauce: Pour in the chicken broth and half of the prepared BBQ honey sauce into the skillet with the toasted rice. Stir gently to combine the ingredients.
  6. Return Chicken and Add Remaining Sauce: Place the seared chicken thighs back into the skillet, nestling them into the rice. Pour the remaining half of the sauce evenly over the chicken pieces.
  7. Simmer: Cover the skillet with a lid and simmer over low heat for 15 minutes, allowing the rice to absorb the liquid and the chicken to cook through.
  8. Add Vegetables: Stir in the mixed vegetables if using, cover again, and cook for an additional 5 minutes or until the rice is tender, vegetables are cooked, and chicken is thoroughly cooked.
  9. Rest and Garnish: Remove the skillet from heat and let the dish sit covered for 5 minutes to allow flavors to meld. Garnish with chopped green onions before serving hot.
