Description

This hearty Meatloaf with Mashed Potatoes and Cheese recipe layers seasoned ground beef with creamy mashed potatoes topped with melted cheddar cheese. It’s an easy, comforting baked dish perfect for family dinners, combining classic flavors with a cheesy finish.

Ingredients

Scale

Meatloaf Layer

  • 1 lb ground beef (85/15 preferred)
  • 1/2 cup plain breadcrumbs
  • 1/3 cup milk
  • 1 egg
  • 1/4 cup ketchup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Mashed Potato Layer

  • 3 cups mashed potatoes (prepared or leftover)
  • 1/4 cup sour cream
  • 2 tbsp butter
  • Salt & pepper, to taste

Topping

  • 1 1/2 cups shredded cheddar cheese
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or line it with parchment paper to prevent sticking.
  2. Mix Meatloaf Ingredients: In a large bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and black pepper. Mix gently until just combined to keep the meatloaf tender.
  3. Press Meat Mixture into Dish: Spread the meat mixture evenly in the bottom of the prepared baking dish. Place in the oven and bake uncovered for 20 to 25 minutes until it starts to set.
  4. Prepare Mashed Potatoes: While the meatloaf bakes, warm the mashed potatoes in a microwave or stovetop. Stir in sour cream and butter, then season to taste with salt and pepper to add creaminess and flavor.
  5. Layer Mashed Potatoes Over Meatloaf: Once the meatloaf layer is partially baked, carefully spread the prepared mashed potatoes evenly over the top layer of meat in the baking dish.
  6. Add Cheese and Bake Again: Sprinkle shredded cheddar cheese evenly over the mashed potatoes. Return the dish to the oven and bake for an additional 10 to 15 minutes until the cheese is melted, bubbly, and slightly golden.
  7. Rest, Garnish, and Serve: Remove the dish from the oven and let it cool for 5 to 10 minutes to allow layers to set. Garnish with chopped fresh parsley if desired. Slice into squares and serve warm.

Notes

  • For a juicier meatloaf, consider adding a splash more milk or an extra egg.
  • You can use leftover mashed potatoes or prepare fresh ones in advance.
  • Feel free to substitute cheddar with mozzarella or a cheese blend for different flavors.
  • If preferred, add some finely diced onions or bell peppers to the meat mixture for added texture.
