Scale
Dry Ingredients
- 1/2 cup (50g) rolled oats
- 1/4 cup (30g) vanilla protein powder
- 1/4 cup (40g) mini dark chocolate chips
Wet Ingredients
- 1 cup (240g) almond butter
- 2 tbsp (42g) honey
- 1/4 tsp peppermint extract
- 1–2 tbsp (15-30ml) unsweetened almond milk (if needed)
Instructions
- Mix Ingredients: In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix thoroughly until the mixture is well incorporated.
- Adjust Consistency: If the mixture feels too dry or crumbly, add unsweetened almond milk one tablespoon at a time, mixing after each addition, until the blend reaches a sticky yet moldable consistency.
- Add Chocolate Chips: Gently fold the mini dark chocolate chips into the mixture until they are evenly distributed without breaking them.
- Form Balls: Scoop out approximately 1 tablespoon of the mixture, then roll it between your palms to form a compact ball. Repeat this process with the remaining mixture.
- Chill: Place the formed protein balls onto a baking sheet lined with parchment paper. Refrigerate them for at least 20 minutes to help them firm up and hold their shape.
- Store: Transfer the protein balls to an airtight container and store them in the refrigerator for up to one week, maintaining freshness and texture.
- Enjoy: Snack on these refreshing mint chocolate chip protein balls whenever you need a nutritious and tasty energy boost.
Notes
- Use full-fat almond butter for best texture and flavor.
- If you prefer a sweeter treat, add a little more honey to taste.
- To make it vegan, substitute honey with maple syrup or agave nectar.
- For a nut-free version, use sunflower seed butter instead of almond butter.
- These protein balls can be frozen for up to 3 months; thaw before serving.
- Adjust peppermint extract carefully to avoid overpowering the flavor.
