Wet Ingredients

  • 1/3 cup corn syrup (80ml)
  • 1/3 cup Baileys Irish Cream (80ml)

  • 12 oz candy melts

Instructions

  1. Combine Dry Ingredients: In a large bowl, mix together the vanilla wafer crumbs and powdered sugar until they are evenly combined.
  2. Add Wet Ingredients: Stir the corn syrup and Baileys Irish Cream into the dry mixture, mixing well. The mixture will be crumbly but should hold together when pressed.
  3. Form Balls: Using about 1 tablespoon of the mixture each time, roll it between your fingertips to form small balls. If the mixture feels sticky, dust your fingertips with powdered sugar to make rolling easier. Set the balls aside on a flat surface.
  4. Melt Candy Coating: Place the candy melts in a microwave-safe bowl and heat in short bursts of 15 to 45 seconds, stirring in between until the candy melts are smooth and completely melted.
  5. Dip and Set: Using a fork or toothpick, dip each cookie ball into the melted candy melts, ensuring it is fully coated. Carefully transfer each coated ball onto a sheet of parchment paper and allow them to dry completely before serving.
