  • Yield: 4 servings 1x

Description

This One-Pan Honey BBQ Chicken & Rice is a delicious and easy-to-make dinner featuring tender chicken thighs cooked with flavorful honey BBQ sauce, savory seasonings, and fluffy rice all in one skillet. With the addition of mixed vegetables, it’s a wholesome, comforting meal perfect for busy weeknights.

Ingredients

Scale

Chicken and Seasoning

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika

Rice and Vegetables

  • 1 cup long-grain white rice
  • 1 1/2 cups chicken broth
  • 1 cup frozen mixed vegetables (peas, carrots, corn)

Sauce and Garnish

  • 1/2 cup honey BBQ sauce
  • Chopped green onions for garnish (optional)

Instructions

  1. Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side, until browned and cooked through. Remove the chicken from the skillet and set aside.
  2. Toast the Rice: In the same skillet, add the rice and toast it for 1-2 minutes, stirring frequently. This step enhances the rice’s flavor by giving it a slight nuttiness.
  3. Add Liquids and Seasoning: Pour in the chicken broth, honey BBQ sauce, garlic powder, onion powder, and smoked paprika. Stir well to combine all ingredients, then bring the mixture to a boil.
  4. Simmer with Chicken and Vegetables: Once boiling, reduce the heat to low and return the chicken to the skillet. Top with the frozen mixed vegetables. Cover the skillet with a lid and simmer for 20-25 minutes, or until the rice is fully cooked and has absorbed the liquid.
  5. Rest and Serve: Remove the skillet from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, garnish with chopped green onions if desired, and serve warm.

Notes

  • For extra flavor, marinate the chicken thighs in the BBQ sauce for 30 minutes before cooking.
  • If you prefer white meat, substitute chicken breasts but be careful not to overcook as they dry out faster.
  • You can use any frozen mixed vegetables or fresh vegetables chopped small for the recipe.
  • For a gluten-free version, ensure your BBQ sauce is certified gluten-free.
  • Leftovers can be stored in an airtight container in the refrigerator up to 3 days.
