Ingredients
Scale
Chicken and Coating
- 4 small–medium chicken breasts
- ½ cup grated Parmesan cheese
- ½ cup panko breadcrumbs
- Salt and pepper, to taste
- Olive oil, for cooking
Creamy Garlic Sauce
- 3–4 cloves garlic, minced
- 1 cup light or heavy cream
- Italian seasoning or oregano, to taste
Instructions
- Preheat the Skillet: Heat a skillet over medium heat and add enough olive oil to coat the bottom, preparing it for cooking the chicken.
- Prepare the Chicken: Season the chicken breasts with salt and pepper. If any breasts are large, gently pound them to an even thickness using a meat mallet to ensure uniform cooking.
- Make the Coating: In a mixing bowl, combine the grated Parmesan cheese and panko breadcrumbs. Dredge each chicken breast in the mixture, pressing gently to adhere the crust.
- Cook the Chicken: Place the coated chicken breasts in the hot skillet and cook for 5–7 minutes on each side, or until the crust is golden brown and the chicken is cooked through (internal temperature should reach 165°F/74°C).
- Prepare the Creamy Garlic Sauce: In a separate pan, sauté the minced garlic in a bit of olive oil or butter until fragrant, taking care not to burn it. Add the cup of cream and sprinkle in Italian seasoning or oregano. Stir frequently and cook until the sauce thickens to a creamy consistency.
- Serve: Plate the crispy Parmesan crusted chicken breasts and generously spoon the creamy garlic sauce over the top. Serve immediately for best taste.
Notes
- You can use either light or heavy cream depending on your preference for richness.
- For extra flavor, add some freshly ground black pepper or a pinch of chili flakes to the breadcrumb mixture.
- Serve with a side of steamed vegetables, pasta, or a simple salad to complete the meal.
- Ensure not to overcrowd the skillet to maintain the crust’s crispiness.
- Let the chicken rest for a couple of minutes before cutting to keep it juicy.
