- Prepare the yogurt mixture: In a mixing bowl, combine the Greek yogurt, creamy peanut butter, honey or maple syrup, and vanilla extract. Stir thoroughly until the mixture is smooth and well blended, ensuring the peanut butter is fully incorporated with no streaks.
- Line the baking dish: Take an 8×8-inch baking dish and line it with parchment paper, allowing the paper to hang over the sides for easy removal of the bars later.
- Spread the mixture: Pour the prepared yogurt mixture into the lined dish. Use a spatula to spread it evenly across the surface, reaching all corners to form a uniform layer.
- Add toppings: Sprinkle the granola evenly over the top of the spread yogurt mixture. If using, sprinkle mini chocolate chips as well. Press gently on the toppings to make them adhere slightly to the yogurt layer.
- Freeze to set: Place the baking dish in the freezer and allow it to freeze for 3 to 4 hours, or until the yogurt mixture is completely firm and solid.
