Ingredients
Scale
Chicken and Seasoning
- 2 pounds boneless, skinless chicken breasts
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Breads and Toppings
- 6 sandwich rolls
- 2 tablespoons butter, melted
- 1/2 teaspoon garlic powder
- 1 cup shredded mozzarella cheese
Instructions
- Prepare the chicken: Place the chicken breasts in the slow cooker and pour chicken broth over them to keep the meat moist during cooking.
- Mix seasoning: In a small bowl, combine grated Parmesan cheese, minced garlic, dried basil, dried parsley, salt, and black pepper. Evenly sprinkle this mixture over the chicken breasts.
- Cook the chicken: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shredded with a fork.
- Preheat oven: While the chicken finishes cooking, preheat your oven to 375°F (190°C) to prepare the sandwich rolls.
- Shred chicken: Transfer the cooked chicken to a plate and shred it using two forks. Return the shredded chicken to the slow cooker and mix it well with the remaining juices for extra flavor.
- Prepare rolls: Split the sandwich rolls and brush the inside of each with melted butter mixed with garlic powder. Place the rolls in the oven for about 5 minutes or until golden brown and toasted.
- Assemble sandwiches: Spoon generous portions of the shredded chicken onto the bottom half of each toasted roll. Sprinkle shredded mozzarella cheese on top and cover with the other half of the roll.
- Serve: Serve the sandwiches hot and enjoy the melty, savory goodness.
Notes
- You can swap out sandwich rolls for buns or ciabatta for a different texture.
- For extra flavor, add a few red pepper flakes to the Parmesan mixture if you like heat.
- Leftover chicken can be refrigerated for up to 3 days or frozen for longer storage.
- This recipe can be adapted to cook in an Instant Pot on the manual setting for about 12-15 minutes for faster preparation.
