Description

This Slow Cooker Parmesan Garlic Chicken Sandwich recipe offers a tender, flavorful chicken filling infused with garlic and herbs, topped with melted mozzarella cheese, and served on warm toasted rolls. It’s a comforting and easy meal perfect for busy days or a casual lunch.

Ingredients

Scale

Chicken and Seasoning

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Breads and Toppings

  • 6 sandwich rolls
  • 2 tablespoons butter, melted
  • 1/2 teaspoon garlic powder
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare the chicken: Place the chicken breasts in the slow cooker and pour chicken broth over them to keep the meat moist during cooking.
  2. Mix seasoning: In a small bowl, combine grated Parmesan cheese, minced garlic, dried basil, dried parsley, salt, and black pepper. Evenly sprinkle this mixture over the chicken breasts.
  3. Cook the chicken: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shredded with a fork.
  4. Preheat oven: While the chicken finishes cooking, preheat your oven to 375°F (190°C) to prepare the sandwich rolls.
  5. Shred chicken: Transfer the cooked chicken to a plate and shred it using two forks. Return the shredded chicken to the slow cooker and mix it well with the remaining juices for extra flavor.
  6. Prepare rolls: Split the sandwich rolls and brush the inside of each with melted butter mixed with garlic powder. Place the rolls in the oven for about 5 minutes or until golden brown and toasted.
  7. Assemble sandwiches: Spoon generous portions of the shredded chicken onto the bottom half of each toasted roll. Sprinkle shredded mozzarella cheese on top and cover with the other half of the roll.
  8. Serve: Serve the sandwiches hot and enjoy the melty, savory goodness.

Notes

  • You can swap out sandwich rolls for buns or ciabatta for a different texture.
  • For extra flavor, add a few red pepper flakes to the Parmesan mixture if you like heat.
  • Leftover chicken can be refrigerated for up to 3 days or frozen for longer storage.
  • This recipe can be adapted to cook in an Instant Pot on the manual setting for about 12-15 minutes for faster preparation.
