- 1/3 cup low-sodium soy sauce
- 1/4 cup honey
- 3 cloves garlic, minced
- 1 tbsp rice vinegar
- 1 tbsp sriracha (optional)
- 1 tbsp cornstarch
- 2 tbsp water
To Serve
- 2 cups cooked jasmine rice
- 2 green onions, sliced
- 1 tbsp toasted sesame seeds
Instructions
- Cook the Chicken: Heat the vegetable oil in a skillet over medium-high heat. Season the diced chicken thighs with salt and black pepper. Add the chicken to the skillet and cook for 6-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
- Prepare the Sauce: In a small bowl, whisk together low-sodium soy sauce, honey, minced garlic, rice vinegar, and sriracha if using. Pour this sauce mixture into the skillet with the cooked chicken.
- Thicken the Sauce: Stir the cornstarch into the water to create a slurry. Add the cornstarch slurry to the skillet with the chicken and sauce. Cook for 2-3 minutes, stirring frequently, until the sauce thickens and becomes glossy, coating the chicken evenly.
- Assemble the Bowls: Spoon the cooked jasmine rice into serving bowls. Top with the sticky chicken mixture. Garnish with sliced green onions and toasted sesame seeds for added flavor and crunch. Serve immediately.
