Description

White Lasagna Soup is a comforting and hearty twist on traditional lasagna, combining creamy cheeses, savory Italian sausage, tender lasagna noodles, and nutritious spinach and white beans in a rich chicken broth. This one-pot soup offers all the flavors of classic lasagna in an easy-to-make, warm, and satisfying dish perfect for chilly days or any season.

Ingredients

Scale

Meat

  • 1 lb Italian sausage

Vegetables & Aromatics

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups spinach, chopped

Broth & Beans

  • 6 cups chicken broth
  • 1 (15 oz) can white beans, drained and rinsed

Dairy

  • 1 cup heavy cream
  • 1 1/2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated (plus extra for serving)

Other

  • 8 oz lasagna noodles, broken into pieces
  • Salt and pepper to taste

Instructions

  1. Cook the Sausage: In a large pot over medium heat, cook the Italian sausage until browned, breaking it apart with a spoon as it cooks. Once browned, remove the sausage from the pot and set aside to keep warm.
  2. Sauté Aromatics: In the same pot, add the chopped onion and minced garlic. Sauté for about 3 minutes or until the onion becomes soft and translucent, stirring occasionally to prevent burning.
  3. Add Broth and Beans: Pour in the chicken broth and add the drained white beans. Bring the mixture to a boil, then reduce the heat to let it simmer gently.
  4. Add Cheeses and Spinach: Stir in the heavy cream, chopped spinach, ricotta cheese, shredded mozzarella, and grated Parmesan. Let the soup simmer for about 5 minutes, stirring occasionally to combine all flavors and melt the cheeses slightly.
  5. Cook Lasagna Noodles: Add the broken lasagna noodles to the pot, cooking them until they are tender but not mushy, approximately 10 minutes. Stir occasionally to prevent noodles from sticking.
  6. Return Sausage and Season: Return the cooked sausage to the soup. Allow it to cook together with the soup for an additional 5 minutes to meld flavors. Season with salt and pepper to your taste.
  7. Serve: Ladle the hot soup into bowls and garnish with extra grated Parmesan cheese if desired. Serve immediately for the best comforting experience.

Notes

  • For a lighter option, substitute Italian sausage with turkey or chicken sausage.
  • To make this soup vegetarian, omit the sausage and add extra vegetables like zucchini or mushrooms.
  • Use gluten-free lasagna noodles to make this recipe gluten-free.
  • Leftovers can be stored in the refrigerator for up to 3 days; reheat gently to avoid curdling the cream.
  • Adjust the amount of garlic and cheeses to your preference for stronger or milder flavors.
