Ingredients
Scale
Meat
- 1 lb Italian sausage
Vegetables & Aromatics
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups spinach, chopped
Broth & Beans
- 6 cups chicken broth
- 1 (15 oz) can white beans, drained and rinsed
Dairy
- 1 cup heavy cream
- 1 1/2 cups ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated (plus extra for serving)
Other
- 8 oz lasagna noodles, broken into pieces
- Salt and pepper to taste
Instructions
- Cook the Sausage: In a large pot over medium heat, cook the Italian sausage until browned, breaking it apart with a spoon as it cooks. Once browned, remove the sausage from the pot and set aside to keep warm.
- Sauté Aromatics: In the same pot, add the chopped onion and minced garlic. Sauté for about 3 minutes or until the onion becomes soft and translucent, stirring occasionally to prevent burning.
- Add Broth and Beans: Pour in the chicken broth and add the drained white beans. Bring the mixture to a boil, then reduce the heat to let it simmer gently.
- Add Cheeses and Spinach: Stir in the heavy cream, chopped spinach, ricotta cheese, shredded mozzarella, and grated Parmesan. Let the soup simmer for about 5 minutes, stirring occasionally to combine all flavors and melt the cheeses slightly.
- Cook Lasagna Noodles: Add the broken lasagna noodles to the pot, cooking them until they are tender but not mushy, approximately 10 minutes. Stir occasionally to prevent noodles from sticking.
- Return Sausage and Season: Return the cooked sausage to the soup. Allow it to cook together with the soup for an additional 5 minutes to meld flavors. Season with salt and pepper to your taste.
- Serve: Ladle the hot soup into bowls and garnish with extra grated Parmesan cheese if desired. Serve immediately for the best comforting experience.
Notes
- For a lighter option, substitute Italian sausage with turkey or chicken sausage.
- To make this soup vegetarian, omit the sausage and add extra vegetables like zucchini or mushrooms.
- Use gluten-free lasagna noodles to make this recipe gluten-free.
- Leftovers can be stored in the refrigerator for up to 3 days; reheat gently to avoid curdling the cream.
- Adjust the amount of garlic and cheeses to your preference for stronger or milder flavors.
